Yucca Con Mojo

1/2 cup chopped parsley
1/2 tsp. chopped garlic
1 TB. fresh lime juice
2 TB. blanched yucca, cut into steak fry size
Combine parsley, garlic, lime juice, olive oil, and set aside.  This is your mojo sauce.
In a large pot with oil heated to at least 350 degrees...fry yucca until golden brown.
Season with salt and pepper while still hot.  Serve with mojo sauce on top
and enjoy!
