Yucca Con Mojo |

| 1/2
cup chopped parsley |
| 1/2
tsp. chopped garlic |
| 1 TB.
fresh lime juice |
| 2 TB.
blanched yucca, cut into steak fry size |

| Combine
parsley, garlic, lime juice, olive oil, and set aside. This is your
mojo sauce. |
| In a
large pot with oil heated to at least 350 degrees...fry yucca until golden
brown. |
| Season
with salt and pepper while still hot. Serve with mojo sauce on top |
| and
enjoy! |
