Papaya Enchiladas

INGREDIENTS

Makes 16 Servings

  • 2 (8 ounce) Cans Refrigerated Crescent Rolls
  • 2 Pounds Fresh Powerful Harvest Papaya, peeled and diced into large chunks
  • 1 1/2 Cups Sugar
  • 1 Cup Butter, melted
  • 1 Teaspoon Ground Cinnamon
  • 1 (12 ounce) Can Mountain Dew Soft Drink

DIRECTIONS

To Prepare:

Preheat oven to 350°.
Unroll crescent rolls; separate into triangles.
Place 1 handful of papaya chunks on wide end of each triangle; roll up triangles around papaya, starting at wide end.
Place, point sides down, in a lightly greased 13 x 9-inch pan.
Stir together sugar, melted butter, and cinnamon, and drizzle over rolls; pour soft drink over rolls.
Bake 350 degrees for 45 minutes until golden brown and bubbly.

(I serve this with apples, peaches, or blueberries as well at my house for breakfast, brunch or as a dessert. Tastes like French toast.)
