Spicy Coconut Fried Shrimp

 
1 Fresh Coconut
16 peeled and deveined shrimp
1/2 cup breadcrumbs
2 Eggs, beaten
1/2 cup, Half and Half
Cayenne Pepper to taste
 
Punch holes in the eyes of the coconuts and drian liquid.  Place nut in 350 degree
oven for 10 to 15 minutes until shell cracks.  Scoop out flesh with a butter knife.
Combine half a cup of freshly shredded coconut with breadcrumbs.  Combine
eggs. half & half, and cayenne pepper.  Dip shrimp in batter mixture, then
roll in breadcrumb mixture until evenly coated.  Fry in hot oil until lightly
brown.
 
Serves 2 as an entree.
