Calabaza

Calabaza, also known as the green pumpkin & West Indian pumpkin, is a popular squash variety that is grown throughout, the Caribbean, Central America, & South America.
It has a sweet taste & is typically used in recipes that call for butternut squash or pumpkin as an ingredient.
It’s seeds are edible and can be toasted or eaten whole.
Calabazas should be heavy for their size; rind should appear dull and stem should be firmly attached.
Skin color can vary from green to tan to sunset - orange.  Its flesh is carrot - orange, sweet, succulent and fine grained.
Encourage consumers to use in stews, purees, soups, or gratins.
